Vineyard
The grapes come from old goblet-grown Monastrell vineyards located in high, sunny areas in the interior of the Alicante PDO, where the Mediterranean climate with a marked continental influence allows for slow and balanced ripening. The soils, poor in organic matter, stony and well drained, favor a concentrated grape with great aromatic expression. Viticulture is carried out in a way that respects the environment, always seeking to reflect the authenticity of the terroir.
Winemaking
The grapes are harvested by hand at the optimum moment of ripeness, selecting only the healthiest and most balanced clusters. After gentle crushing and destemming, the must is partially fermented under temperature control to preserve the freshness and primary aromas of the Monastrell. Fermentation is interrupted by cooling, maintaining part of the grape’s natural sugars, which gives rise to this sweet wine of great purity and elegance. The wine then rests in tanks before bottling.
Tasting Analysis
View: Deep cherry color with tile reflections, clean and bright.
Nose: Intense and clear aromas, with a predominance of ripe black fruit, notes of plum jam and hints of nuts.
Mouth: In the mouth it is fresh, tasty and balanced, with a perfectly integrated natural sweetness. The sensations of prunes, figs and a long finish with balsamic hints stand out.
Pairing: Ideal with blue cheeses, foie gras, pâtés and chocolate or red fruit desserts.
