Vineyard
Sourced exclusively from organic vineyards of both varieties. The best of each variety is extracted separately through a skin maceration at very low temperature to enhance the varietal aromas.
Winemaking
The first fermentation of the free-run juice of the varieties is carried out separately under strict temperature control at 16o. After blending, the wine is bottled with the liqueur de tirage for a second fermentation, foaming and aging in the bottle for at least 12 months at a low temperature to refine the bubbles and respect the varietal aromas obtained during the previous maceration. It is bottled with an expedition liqueur made using the base wine itself, which is key to respecting the wine’s aromatic profile.
Tasting Analysis
The result is a cava with a fresh, floral character, with a strong presence of white fruit, notes of Mediterranean herbs and subtle notes of pastry and butter from its aging in bottle. In the mouth its bubbles are pleasant and fragrant. It has a fresh, harmonious and balanced passage that lingers in the aftertaste.
